We’ve had a surplus of eggplant lately and to get it all cooked up in one batch I decided to make baba ghanoush.  Once upon a time, this was the only human food that my cat Milo would eat…weird.

It’s a pretty easy endeavor, blacken up some eggplant, cook until it’s soft and blend it with some other delicious things.  It’s not too involved but it makes for a tasty dip for veggies and flat bread or a yummy spread for sandwiches.  It’s perfect for the low-carb diet as you can control what goes in and the bulk of it is eggplant!

I made a larger than normal portion so I could freeze some of it for another day!  Here’s the recipe…

eat with your hands picnic party…

Sometimes using no utensils at a picnic is the best thing in the world.  Even having a picnic inside is alright by me on a rainy day.  I used to have antipasto nights with my old roommate and it was the best thing to have on a summery day.  Simple, but chock full of flavour…you create each flavour combination yourself and every bite can be different!

You can put whatever you want on your plate but this is what we had for lunch one dreary day that instantly made us feel cheery again!

What you need!
4 large slices of whole wheat bread ripped into chunks
6 slices of calabrese
4 slices of prosciutto salami
9 slices of cucumber
handful of baby carrots
2 roasted artichoke hearts
4 kalamata olives
2 large green olives with provolone
4 small garlic green olives
4 roasted eggplant
baba ghanoush for dipping
