Clearly I didn’t wait for the cake to cool enough and the icing went a bit oozy, didn’t matter though, it still tasted amazing!

 

This spring I went to New York to visit some cuzzies and family, I had no idea but apparently my auntie makes this amazing cake that everyone scarfs down whenever it’s in sight.  It’s probably the best carrot cake I’ve ever eaten, it’s super moist and the chunks of pineapple makes it extra special.  And of course, because my family loves excess, everyone insists that you have to make double the icing…they are not wrong.

Here’s the recipe!

What you need!
1 cup of flour
1/2 cup of sugar
3/4 cup oil
2 eggs
3/4 cup grated carrots
1/2 cup crushed pineapple, well drained
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt

Icing (this is already doubled):
6oz cream cheese
4 tbsp crushed pineapple
4 tbsp softened butter
2 cups of icing sugar

What to do!

1.  Preheat oven to 350 degrees, grease an 8×8 pan with some butter and set aside

2.  Combine flour, baking powder, baking soda, cinnamon and salt in a small bowl and set aside

3.  In a large bowl, mix sugar, oil and eggs until smooth

4.  Gradually add in dry ingredients until just moistened.  Fold in carrots and crushed pineapple into the batter.

5.  Pour into your 8×8 pan and spread out evenly with spatula if necessary.  Bake for 50 minutes or until toothpick comes out clean when inserted.

6.  Icing – In a medium bowl, combine room temperature cream cheese and butter with the pineapple and beat until smooth.  Add icing sugar slowly and beat until light and fluffy, you may not need all the icing sugar or a touch more depending on what kind of consistency you like.

7.  Pour icing over entire cake when it’s fully cooled.

8.  Or if you want to be fancy, cut the cake in half and put half the icing in the middle and the rest on the top.  Either way it’s mega tasty!
