I think brunch is my all time favourite meal, it’s at the perfect time, you can have anything you like and it always seems a little fancy.  I invited a new friend over for brunch one morning and although I set it for 11am, I was feeling very unmotivated to get up early to cook so I pre-made everything the night before.  Me so lazy.

Here’s the recipe for the quiche plus the complete brunch sides….

What you need!

1 sheet of puff pastry
1 small pkg of goat cheese
1 tbsp butter
4 cups sliced mushrooms
1/2 tsp dried thyme
1/2 tsp dried tarragon
1 tbsp chopped fresh chives
4 eggs
1 cup milk
salt and pepper to taste
cayenne optional
grated cheddar for the top

What to do!

1.  If needed, roll out your puff pastry sheet so that it will fit in your quiche dish.  Press it in gently and trim the edges.  Spread the goat cheese evenly.  Stick it in the fridge.

2.  Preheat oven to 400 degrees

3.  In a large pan, melt butter and sautee mushrooms until the liquid is almost all evaporated.  We don’t want mushy quiche do we?  Add salt and pepper to taste.  Toss in the herbs at the end.  Let this cool and then add it to the quiche over the goat cheese.  I also added a few dehydrated slices of heirloom tomatoes, you could use sun-dried if you like.

4.  In a big ol bowl, whisk eggs, cayenne and salt and pepper to your liking.  Pour over mushroom mixture.  It won’t fill it to the top (standard pie pan) but will expand as it’s cooking.

5.  Bake for 35-40 minutes or until it doesn’t jiggle or knife inserted comes out clean

6.  Serve immediately or, let it come to room temperature and refrigerate.  Re-heat in the oven at 350 degrees for 20-25 minutes.

Yay brunch!  For sides we had an organic salad dressed with fig balsamic and olive oil.  A little yogurt parfait with canned peaches from Cawston and toasted sugared hazelnuts.
