strawberry applesauce cupcakes

My good friend has an autumn birthday and for dessert following dinner, I searched through my pantry of preserves and decided to make her some mega girlie strawberry applesauce cupcakes.  I have no idea what the difference between muffin and cupcake recipes are but this one worked out just fine!  The cakes are topped with a honey buttercream (my go to for EVERYTHING that needs frosting) and some coloured flavoured sugar that I made.

Here’s the recipe!

What you need! (makes 18 cupcakes)
2 cups flour
1 tsp baking soda
3/4 tsp salt
1 stick unsalted butter
1 cup sugar
4 eggs
1 1/2 cup strawberry applesauce

Honey Buttercream:
1 1/4 cup confectioner’s sugar
1/2 cup butter
1 tbsp honey

What to do!

1.  Preheat oven to 350 degrees.  Sift dry ingredients in a medium bowl and set aside.

2.  Cream the warm temperature butter and sugar until light and well…creamed.  Add one egg at a time, then applesauce, then dry ingredients.  Mix until just incorporated, don’t over mix!

3.  Fill muffin liners about 3/4 full.  Bake for 18-20min or until a toothpick jammed in the middle comes out clean.

4.  Let cool before frosting or you will get a puddle of goo.

5.  For frosting, whip warm temperature butter, confectioner’s sugar and honey together until nice and fluffy.  Fill a piping bag and frost with little starlettes, make flowers, smear it on with a knife, whatever!

Tips and Tricks
1.  These cupcakes are extra moist and delicious so use cupcake liners to avoid stickiness
2.  Feel free to cut down the sugar depending on how sweet your strawberry applesauce is
3.  For flavoured sugar, put a couple of tsp of granulated sugar in a ziplock bag, squirt a couple drops of MIA (water flavouring), mush it around and spread it out on a plate to dry.  The food colouring and concentrated flavour will make that sugar something kind of cool.
