Spur of the moment, I realized how much I like stuffed veggies so for a quick and easy dinner one night I decided to pull out some peppers and smokie sausages.  Super easy and wickedly tasty, I threw in some goodies like mushrooms and marscapone cheese to the mix.  Paired with a fresh salad with some canned oranges I did last year, it couldn’t be easier!  Technically low carb and paleo-ish 🙂

What you need!
3 delicious tasting sausages of your choice
2 cups of sliced mushrooms
few big dollops of marscapone cheese
4 medium sized peppers

1.  Pre-heat oven to 350 degrees.  Cut the peppers in half and take out seeds and ribs.  Put them cut side up in a casserole dish and butt them up against each other so they don’t get all spilly.

1.  Take the casing off the sausages and crumble into frying pan on medium heat.  Fry those bits up and continue breaking them up if necessary

2.  Add the sliced mushrooms and cook until they are soft

3.  Throw in some marscapone cheese and let it get melty.  Add as little or as much as you like until the mix is creamy.

4.  Fill the pepper halfs with the sausage mix and bake for 30-40 minutes or until the peppers look yummy and soft.
