Sometimes faux stuffed things are better than the real thing because a) it’s faster and b) you can be messy about it and looks just about the same 🙂  This hearty dish turned out great with savory lamb with tons of fresh peppers and tomatoes.

Here’s the recipe!

What you need!
3 medium eggplants
2 pablano peppers
3-4 medium sweet peppers of varying colour
1 lb ground lamb
1 cup of cherry tomatoes
1/2 onion
1 tbsp minced garlic
2 tbsp curry powder (or to taste)
1/2 cup of milk
salt and pepper
olive oil

What to do!

1.  Preheat your oven to 400 degrees.  Drizzle the pans with lots of olive oil.  Cut your eggplants in half, season with salt and pepper and lay them face down on the cookie sheet.  Bake for 20 minutes until golden and soft.

2.  Place your eggplant in a large casserole dish cut side up and set aside.  Turn down the oven to 350 degrees.

3.  Prepare your filling!  First on medium-high heat in a large pan, add your chopped onions and minced garlic and sautee until translucent and aromatic.  Next add in the ground lamb and cook until browned.

4.  Add in your curry powder.  Next add in your chopped hot and sweet peppers.  Cook the whole mix for a few minutes and add milk.  Add salt and pepper to taste.  Feel free to add more curry powder if needed.

5.  Turn off the heat and mix in the cherry tomatoes.  Pour the whole mixture over the eggplant and spread out evenly.  Bake in the oven for 30-45 or until the whole dish gets nice and bubbly. Take it out, let cool for a few minutes and serve…enjoy!
