Round 2!  Gluten free bread is so hard to make!  This time I have high hopes for this bread version.  After reading numerous websites about different gluten free flours, different leavening agents and techniques, I settled on a coconut flour version with some enhancers.  Different then wheat bread but tasty all the same, this baby is low in carbs and uses only 1 cup of total flour.

Hooray for coconut bread!  Here’s the recipe…

What you need!

3/4 cup coconut flour
1/4 cup flax meal
1 tsp xanthan gum
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
7 eggs
1/2 cup melted butter
2 tbsp coconut milk
1/4-1/2 cup of sunflower seeds

What to do!

1.  Pre-heat oven to 325 degrees.  In a large bowl, mix the dry ingredients together.

2.  In a medium bowl, beat the eggs and coconut milk together

3.  Gently mix the wet ingredients into the dry.  Mix the butter in afterwards.  Throw in as many sunflower seeds as you like and mix in gently.

4.  Line a small loaf pan with parchment paper and press the mixture in.  Cover with foil and bake for 15 minutes.  Continue to bake for another 25 minutes.  Take out of oven, let cool and enjoy!

fun fact: sunflower seeds turn greeny-blue when it comes in contact with baking soda, safe to eat but weird looking!

    You left the sunflower seeds out of the recipe entirely!

      Thanks! It was one of those last minute throw ins that I forgot to add in the recipe. It’s fixed now!
