Brussel sprouts are one of those veggies that always seems surprisingly easy to make to me.  I’ve made the charred Parmesan and bacon version so many times that this time I decided to change it up!

Cream based, a little nutty and a whole lot of yummy, this version of brussel sprouts definitely brings out the freshness and sweetness of veggie.

Here’s there recipe…

What you need!
2 tbsp butter
1 1/2 lbs brussel sprouts
1 cup chicken broth
1 medium red onion
1/2 cup heavy cream
handful of sliced almonds
salt and pepper

What to do!

1.  Rinse and cut your brussels in half

2.  In a large saucepan on med-high heat, melt butter and begin sauteeing and coating the brussel sprouts.  Add chicken broth, cover and let simmer for 5 minutes or until brussels are tender.

3.  Remove brussel sprouts and set aside.  Reduce chicken broth to at least 1/4 cup.  Add in finely chopped red onion and sautee until soft.  Add almonds when liquid has almost evaporated (you can add a bit of oil here if you like) and fry until lightly brown.

4.  Add in heavy cream, salt and pepper to taste and reduce until sauce coats back of spoon.  Add brussel sprouts back in and toss to coat.
