Low carb breads are hard to find and while at Famous Foods one day, I picked up a bag of chickpea flour having no idea what I was going to do with it.  Searching for chickpea breads came up with recipes that still used wheat flour mixed in or xanthan gum.  But alas!  There is a traditional street food bread in Tuscany that is served up at pizza shops as a snack…la cecina!

Ingredients are super simple, chickpea flour, water, olive oil, salt and pepper…..too good to be true!  I added a little garlic to mine and you can top it off with any kind of herbs…it’s kind of like a dense moist focaccia with a slight crispy top.

Low carb, packed full of vitamins and delicious!  Here’s the recipe!

What you need!
500 gr (approx 4 cups) chickpea flour
4 cups of cold water
1 tbsp of fine sea salt
1 cup and 3 tbsp of olive oil (mine was infused with garlic)
1 clove of garlic minced
fresh ground black pepper

What to do!

1.  It can’t be any easier!  In a large bowl, sift in the chickpea flour or whirl it around with a whisk so there are no clumps.

2.  Add the salt, garlic and 3 tbsp of oil.

3.  Slowly whisk in the water a little at a time so you don’t form clumps.  The batter will be very watery!  Set aside for a minimum of an hour up to 4 hours.

4.  Preheat the oven to 350 degrees.  Pour about a cup (or less depending on your cookie sheet) onto your edged cookie sheet or pizza pan.   The oil should cover the bottom entirely.  Pour the batter in until it reaches about 1/2″ in depth, the olive oil will float on top as well.  Bake for 30-35 minutes or until golden and edges pull away from sides.

Don’t fill the pan over 1/2″!  If there is too much batter for one pan, use a second one or bake a second batch.  Cut the bread into wedges and enjoy with a variety of cheese, charcuterie or just by itself as a low carb snack.  Enjoy!
