crazy good almond chocolate low carb cookies!

So I’ve learned a few things about almond flour.  First off, even if you add things in like baking soda or some sort of leavening agent, it doesn’t really puff up and spread out like regular flour.  So for things like cookies, you do have to smush them down into the shape that you want them to be before throwing them in the oven.

Secondly, it doesn’t mix up like regular flour quite the same.  It takes a tiny bit longer to absorb liquid so at first your batter/dough may seem a little dry but in a few minutes it absorbs the liquid a bit better and becomes moist.

Onward!  We love cookies and now I think I will fall in love with these cookies.  They are slightly crispy, moist on the inside but still very airy (another attribute of nut flours I think).  Almost guilt-free and super low in carbs!

Enjoy this recipe, these cookies are actually good for you!

What you need!
2 1/2 cups almond flour
1/4 cup of cocoa
1/2 tsp kosher salt
1/2 tsp baking soda
1/2 cup olive oil
1 egg
1 cup sugar or sugar substitute for lower cals
1 tbsp vanilla extract
1 tsp amaretto extract
small handful of sliced almonds

What to do!

1.  Preheat oven to 350 degrees. In a large bowl combine the almond flour, cocoa, salt, sugar, and baking soda together.

2.  In a separate bowl, combine olive oil, extracts, and egg together.

3.  Slowly mix the wet ingredients into the dry.  Don’t worry if it doesn’t combine together right away into a dough-like consistency, the almond flour will absorb eventually.  It won’t look exactly like your typical cookie dough, a little more granular looking and oily.

4.  On a cookie sheet lined with parchment paper, take rounded tablespoon portions of the dough and place it on the sheet.  Press the mounds down into cookie shapes (with back of spoon or hand) and place a few slivers of almonds on top as decoration.

5.  Bake for 7-10 minutes or until they feel dryish to touch (will have a little bit of give until they cool).  Cook on racks and enjoy!
