a “what’s in my pantry” cookie inspired cake…

One night my sweet tooth was acting up and company was coming over.  No time to go to the grocery store to pick up a cake so I scrounged through our cupboards and came up with this recipe that actually could be made into cookies instead of a cake.

It’s kind of your classic chocolate chip cookie recipe with a bunch of added crap.  Instead of labouring over the oven making batches of cookies, I dumped the batter all in one dish and baked it as a cake.  Turns out I’m a genius.

Here’s the recipe!

What you need!
1  cup butter
1/2 cup shortening
4 cups flour
2 tsp baking soda
3/4 tsp salt
1 cup sugar
1 cup brown sugar
2 eggs
1 tbsp vanilla
1 bag chocolate chips
1 cup shredded coconut
3/4 cup chopped pecans

What to do!

1. Preheat oven to 350 degrees.  Butter a 9″x12″ casserole dish and set aside. In a medium bowl, whisk together flour, baking soda, and salt; set aside.

2.  In a separate bowl,  cream butter, shortening (make sure they are room temperature) and sugars.  Add eggs and vanilla and mix until well combined.  In small batches, add the flour into the wet mix and fold in gently.

3.  Next fold in the chocolate chips, coconut and pecans.

4.  Spread the dough evenly in the casserole dish.  Bake for 40-45 minutes and make sure to rotate the dish halfway through. Cake is ready when the edges are brown or when you jab a toothpick in and it comes out clean.  Cut into big pieces and enjoy!
