This was intended to be a meal but instead turned into a snack that barely lasted a day.  I had a whack load of zucchinis in my fridge that needed to be used soon so I decided to make a zucchini crust pizza with a bunch of random toppings found in the fridge.  It turned out quite yummy, with melty goat cheese, juicy tomatoes and interesting crust!  If I built it up higher, it could have easily turned into a casserole, but the thinness make it a perfect snack.

Here’s the recipe!

What you need!

3 medium sized zucchinis
2 eggs
1/2 cup of parmesan
1 medium tomato
1/2 red pepper
1/2 onion
3/4 cup shredded aged cheddar
1/2-3/4 pasta sauce
goat cheese
a few leaves of basil
salt
pepper
olive oil

What to do!

1.  Preheat oven to 400 degrees.  Wash and cut the ends off the zucchini, grate them and squeeze out moisture by hand or pat dry with towel.

2.  Mix the zucchini with eggs and parmesan cheese.

3.  In a large casserole dish, oil the bottom and sides and spread the zucchini evenly.  You can even raise the edges a bit.  Salt and pepper to taste.  Alternatively you can use a non-stick pizza pan.

4.  Bake for 10-15 minutes until golden and brown on edges.

5.  Prepare your toppings!  Shred your cheese and slice your veggies.

6.  Spread the tomato sauce over the zucchini

7.  Add all your toppings.  Bake for 5-10 minutes or until all the cheeses turn melty.  Enjoy!
