curry apple butternut squash soup…

Nothing will warm up your bones like a steaming thick cup of butternut soup.  Along with the classic onion base, I added some apples and some curry spice to make it extra warm in your belly.

Here’s the recipe!

What you need!
1 butternut squash
1 yellow onion
3 apples
1 cup of cherry tomatoes
2 cups of apple juice
2 tbsp curry powder (or to taste)
2 cups of water
olive oil

What to do!

1.  Peel the butternut squash and the apples

2.  Chop the squash and apples into chunks

3.  Chop the onions.  In a large stock pot on medium heat, drizzle some olive oil and sautee the onions and cherry tomatoes with the curry powder until soft

4.  Add the squash, apples and water and bring up to a boil.  Turn down to simmer for 40-45 minutes or until squash is cooked.

5.  Once everything is cooked, puree the soup using a hand blender, food mill or regular blender.  Pour back into pot and add apple juice.  At this time you can thin the soup if it too thick with some additional water.  Add salt and pepper to taste and serve hot!  Enjoy!
