roasted lemon green beans…

I’ve always pan fried green beans in a big wok but I read somewhere that roasting them is tasty too.  This recipe couldn’t be easier and serves up quick!  Fresh green and yellow beans are sweet and tender and should burst in your mouth with flavour!

Here’s the recipe!

What you need!
1 lb green and yellow beans
1 heirloom tomato
olive oil
piave cheese
lemon juice

What to do!

1.  Preheat your oven to 400 degrees.  Wash your beans, dry them and slice your tomato.  On a cookie sheet drizzled with olive oil, spread out your beans and tomato slices.  Season with salt and pepper

2.  Roast in the oven for about 10 minutes, don’t overcook or they will be mushy!  Once they are done, toss it in the a bit of lemon juice and grate some piave cheese on top.  Enjoy!
