roasted peppers a la oven broiler…

As much as I would love to flame char peppers over a gas stove, I have a conventional electric one instead.  So, next best thing is to broil these babies up until they are slightly blackened and oh so delicious.  Great as a side but more excellent as an addition to whatever your making.  Add them to sandwiches, pasta, salads and even as a tasty garnish.

Squeeze a bit of lemon and some grated piave cheese and your good to go!  Here’s the recipe…

What you need!
An assortment of peppers 7-8 (I had mostly sweet with 2 hottish banana peppers)
1 garlic clove
1 year old piave cheese
lemon juice
olive oil

What to do!

1.  Preheat oven to 400 degrees.  Wash down all your peppers, cut in half and take out the seeds.  Slice into very thin slices.

2.  Take a cookie sheet and drizzle with olive oil, place the sliced peppers on the pan and sprinkle with salt and pepper.   Toss and put it in the oven for 10-15 minutes or until peppers start to blacken around the edges.

3.  After it is cooked, tossed the peppers with about 1 tbsp of lemon juice and grate some piave cheese on top.  Enjoy!
