A one dish wonder!  Cut up some veggies that you have on hand and lay some delicious pieces of salmon on top.  Bake in the oven and if you have a delicious dinner and leftovers can be made into yummy sandwiches!  Super easy to do and full of vitamins and minerals!

Here’s the recipe…

What you need!
4 pieces of salmon
1 zucchini
8 small to medium carrots
2 small eggplants
4 cloves of garlic
fine sea salt
coarse black pepper
4 tbsp of butter

What to do!

1.  Preheat the oven to 375 degrees.  Cut your veggies into small 1 1/2″ cubes and slice the garlic thinly

2.  Put the vegetables in the bottom of a large casserole dish.  Season with salt and pepper to taste.  Layer the salmon on top and sprinkle with slices of garlic.  Dollop the butter randomly in the dish.  Put it in the oven for 20 minutes.  If the salmon is cooked, remove from veggies and set aside.  Give the veggies a quick toss and put in the oven for another 15 minutes or until soft.
