rare inside round mustard garlic roast…

With some roasted eggplant and a tomato salad, a small inexpensive roast for two was easier to make than I had imagined.  Inside round by nature is lean and can be tough if cooked too long.  The key to success is to marinate with something acidic for a few hours and cook it only to rare or medium rare.  Our one pound roast was a little too much for one meal but made some great sandwiches the next day!

Here’s the recipe for the roast!

What you need!
1 lb inside round beef roast
2 cloves of garlic
1/4 cup of yellow mustard
2 tbsp of dijon
sea salt

What to do!

1.  Preheat the oven to 500 degrees

2.  Cut the garlic into slices.  With a sharp knife, cut slits into the meat and push the garlic slices in.

3.  Mix the mustards together and slather it on the roast on all sides.

4.  Sprinkle the top with coarse sea salt (don’t worry it may seem a lot but you scrape it all off before you eat it!)

5.  Cook the roast for 12-15 minutes and take it out of the oven and let it rest for at least 5 minutes.  Scrape off the marinade and salt and slice the roast into thin strips.  Serve with a side of veggies and enjoy!
