mmmm chinese meatloaf….fried rice!

Hooray for leftovers!  My mom used to make the most fabulous fried rice out of anything we couldn’t finish the night before.  Even though I didn’t have the classic roasted pork, I did have some tidbits here and there that I could use.  A few ingredients and voila!  A load of rice for lunches and snacks.

Here’s the recipe but feel free to add anything you like!

What you need!
8-10 cups of cooked rice
2 cups of frozen peas
1 1/2 cups of pre-cooked shrimp
1 package of smoked tofu
4 eggs
4 stalks of green onions
dark soy sauce
light soy sauce
olive oil
salt and pepper

What to do!

1. Start with your eggs!  Scramble them up and chop up the green onion.

2. On high heat in your big ol’ wok, drizzle some olive oil and scramble up those eggs breaking it apart as it cooks.  Remove and put aside.

3.  Cut your tofu into cubes and set aside

3.  On medium-high heat add the peas, shrimp, eggs and tofu and heat through…once it’s warmed add the rice!

4.  Mix it all up until it looks nice and now you can season!  This part is up to you.  I drizzle equal parts of dark soy and light soy and stir it gently until it’s the colour that I like.  Taste test or you’ll never know!  Add more soy and/or salt until it reaches your desired taste!
