A long time ago, a lovely co-worker of mine made these incredibly delicious cookies for Christmas and I’ve stored it in my memory banks to retrieve later.  Well for some reason on a late-night-baking-with-friend night more than a year later , I thought of making these cookies!  They are light, crispy on the outside, moist on the inside and rolled in cinnamon sugar…awesome.

Read on for the recipe!

What you need!
3 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup shortening
1/2 cup butter
1 1/2 sugar cups + 5 tbsp
2 large eggs
2 tbsp cinnamon

What to do!

1.  Preheat oven to 350 degrees.  Like all cookie recipes, you start with the wet and dry separately.  In a large bowl, cream the shortening and butter with the 1 1/2 cups of sugar.  When it’s nice and fluffy, add the eggs one at a time.  In a separate bowl, mix the flour, baking soda and salt together.  Slowly add the dry mix to the wet mix and stir gently.

2.  In a small bowl, mix the 5 tbsp of sugar with the cinnamon.

3. Use a spoon and scoop up about a 1 1/2″ ball of dough.  Use a second spoon to help round the dough out.  Plop it in the cinnamon sugar and roll it around until it’s coated.  Using your hands, pick up the dough ball and roll it to make it rounder.  Place it on a baking sheet covered with parchment paper and flatten it out a little.

4.  Fill the tray (about 12 per tray) and bake it in the oven for about 12 minutes or until the edges turn slightly golden.  Enjoy!
