by the beach pesto pasta salad…

We were invited to a potluck dinner by the beach last minute and I had just whipped up a pasta salad.  Something quite summery about cold pasta salad, fresh veggies, hearty bowtie pasta, all finished off with pesto.  You can’t hate it right?

Here’s the recipe!

What you need!
12 cherry tomatos
1/4 english cucumber
2 cups bowtie pasta
50 grams feta cheese
1 1/2 cups canned artichokes
5 tbsp pesto
salt
pepper

What to do!

1.  Boil up some water and cook your pasta until al dente.  Cut your cucumbers into 1″ pieces.  If the seed center is very wet, scoop it out or else your salad will be very mushy!

2.  Cut your wee tomatos in half!

3. Once you drain your pasta, give it a quick rinse with cold water.  This will wash away some of the starch so it doesn’t stick together.

4.  Drain the artichokes and throw ’em in!

5.  Crumble in your feta and add your pesto.  Toss gently and salt and pepper to taste.  Enjoy!

veggies – $3.00
pasta – $1.00
other – $1.50

Total: $5.50 for 4 side servings or $1.38 per person
