Summer Salad Series #2….

Hooray for garden vegetables! Finally my butterhead baby lettuce has matured enough to be plucked from the fire escape garden I have outside!  Something is quite gratifying about eating something that you grew from seed.  This salad was sadly inspired by a trip to Walmart….their superstore was selling fully cooked roasted chickens for $5.00!  Really, why bother making it yourself?

Here are the ingredients for this Summer Salad #2 – makes 2 servings!

1/2 roasted chicken (pulled meat)
2 baby butterhead lettuce
1 thinly sliced shallot
6 strawberries sliced
1/2 orange pepper sliced
1/2 yellow pepper sliced
4 tbsp of japanese ginger/orange viniagrette
