Ooey Gooey Mega Chocolatey Peanut Butter Chip Brownies….

One of my fav desserts growing up were brownies.  I loved the moist fudgey-ness of it all and could gobble up trays of them at a time.  I haven’t made them in a while but I tried a cocoa version since I didn’t have any chocolate I could melt into the batter.  They turned out amazing!  Super rich and dark, you almost can’t eat a whole one.  Dressed with some fruit and whipped cream, this would make a great dessert!

Here’s the recipe for the best brownies you’ll ever make!

What you need!
3 large eggs
1 cup white sugar
1 cup light brown sugar
1 cup melted butter
1 1/4 cups cocoa
1/2 cup flour
1 1/2 tbsp vanilla
1/2 tsp salt
1 1/2 cup peanut butter chips

What to do!

1.  Set your oven to 350 degrees.  Grease and flour a 8″x8″ pan (I used a glass one).

2.  First let’s work on the wet stuff!  Beat the 3 eggs until nice and fluffy.  Add in the vanilla and melted butter followed by the sugars.

3.  In a separate bowl combine the flour, cocoa and salt together.  Give it a quick whirl with a fork to break up any lumps.

4.  Add the dry ingredients into the wet bowl and mix gently until it’s almost all combined but not quite (over mixing will make the batter very cakey).

5.  Measure out your peanut butter chips and add them to the batter.  Fold them in (this will mix the rest of the batter up).

6.  Pour it into your dish and bake for 40-45 minutes are until a toothpick poked in the middle comes out clean.  I have to admit, I always pull it out a little early (slightly undercooked) so it remains nice and moist for a few days.  Enjoy!
