braised coca-cola beef brisket…

Beef brisket is a toughie and needs to be cooked for a long time before it gets tender.  My dad used to make spareribs and added coke to the sauce since it gave it a caramelized flavour that is sweet and almost malty.  At Christmas last year, I used a coke glaze for the ham and no one was the wiser.

What the hell, I’m adding it to beef brisket…anything that is braised should have some sugar in it anyway to make it thick and delicious.  I made a whack of it and added a bunch of root vegetables to make it extra hearty.

Here’s the recipe!

What you need!
3-4 lbs beef brisket
2 large parsnips
2 medium carrots
1 large baking potato
1 can of corn
2 medium onions
6 cloves of garlic
1 bottle of coke
1 can of condensed beef broth
2 tbsp of dried tarragon
2 large splashes of balsamic vinegar
olive oil

What to do!

1.  First pat down your beef brisket to make it dry (it sears better this way!)  In a large frying pan, drizzle some olive oil and on high heat sear the brisket on both sides.

2.  Dice up your onions and garlic.  In a large stock pot on medium heat, drizzle some olive oil and add in the onions and garlic.  Sautee until golden then add the brisket in.

3.  In goes the weird ingredient….coke!  I happen to have a coke zero in the fridge but I’m sure any version will do.  Put in the whole bottle, add the beef stock and as much water so that it covers the meat.  Turn up the heat to high so it boils and then lower the temperature until it simmers.  Simmer for hours!  And I mean hours.  Probably about 2 hours at least.

4.  After it’s simmered for a few hours, go ahead and add in your root vegetables.  I cut them into chunks and just add them in.  The baking potato will eventually dissolve in the pot and give it a nice rich thick sauce.  Once the veggies are cooked, you can take the lid off and let the excess liquid evaporate.  For the final touch, add the balsamic vinegar, tarragon and salt and pepper to taste.  Serve over rice…enjoy!

    I used to try chicken cooked in pepsi, it was interesting. Now coca cola beef brisket, what a wonderful idea. I think it’s gonna taste wonderful. Thanks for sharing.
