cranberry basil chicken sandwich on olive bread…

I love really good sandwiches that are loaded with different flavours!  With some leftover chicken in the fridge, I made sandwiches for dinner one night with a cup of chicken soup on the side.  I guess it’s more of a lunchy thing but it was still filling enough for a dinner.

Here’s how you make it!

What you need!
olive bread
1/4 roasted chicken
6-8 leaves of basil
1/4 cup of cranberries
1/2 cup of water
1 tbsp of sugar
goat cheese

What to do!

1.  There’s not much to do besides make the cranberry spread thing.  In a small pot on high heat, put the cranberries, sugar and water in.  Bring to a boil and then reduce down to a simmer.  The goal is to re-plump those cranberries and reduce the water.  You can take it off the heat once there’s only a bit of water left.

2.  Assemble your sandwich!  I put the goat cheese down first, than the cranberry spread.  Put a smattering of basil leaves and top it off with some warmed up chicken.  Hooray! Serve with a piping hot bowl of soup or a fresh summery salad!
