sugar pie that will certainly make you diabetic…

My first bite of sugar pie was when I was in Quebec a long time ago and I forgot how much I love this sugary dessert!  I had a vegan version at The Foundation and they used coconut milk instead of cream which added a subtle nutty flavour.  I decided to make one of these delicious sugar coma inducing pies using a frozen shell!

Here’s the recipe!

What you need!
1 1/2 cup light brown sugar
1/2 cup maple syrup
1/4 cup coconut milk
1 egg
1 tbsp flour
2 tbsp melted butter

What to do!

Pre-heat your oven to 400 degrees.  Take your pie crust out of the freezer and let it thaw while you’re mixing the ingredients.  In a medium bowl, mix all the ingredients together and pour it into the pie shell.  Bake for 25-30 minutes or until edges are set and the center is wobbly.  As long as the the top looks like it’s caramelizing and the crust is brown, you’re good to take it out.  It’ll set even more once it’s chilled.

Fun fact!  Coconut milk thickens in the fridge to a whipped cream consistency….add a little bit of sugar to it and stick it in the fridge for an hour.  Voila…delicious coconut milk topping for your sugar pie!
