A visit to Sunrise Market got me giant stalks of asparagus for only $1 a bundle! I always use the skinny kind that always cooks up tender and crisp so I wasn’t sure if these guys were going to be tough. Turns out they were great even though I had to cook them a little bit longer than usual. This recipe is a cinch and easy on the wallet.
What you need!
2 bunches of asparagus
1 lemon
4 tbsp butter
sea salt
ground pepper
What to do!
1. Pre-heat your oven to 375 degrees. Wash your asparagus and break off the ends to get rid of the toughie bits. Put them in a large glass casserole dish.
2. Melt the butter and squeeze in half a lemon depending how juicy it is. Go ahead and squeeze in the second one if you think there isn’t enough marinade.
3. Toss the asparagus in the butter/lemon sauce and sprinkle on some sea salt and fresh ground pepper
4. Roast in the oven for 25-30 minutes, giving a quick toss half way through. Enjoy!

Total: $2.75 for 3 people or $0.92 each
