creamy goat cheese roasted red potatoes…

Who doesn’t love a good roasted potato?  This potato salad inspired side dish has oven roasted potatoes with a creamy goat cheese dressing.  Rich and creamy with little bits of crispy potato skin.  This is a vegetarian version but for something even more decadent, try adding some chunks of pancetta.  Here we go!

What you need!
4 large red potatoes
50g goat cheese
1 cup of cream
2 stalks of green onions
2 tbsp sea salt
1  tsp black pepper
2 tbsp dried oregano
olive oil

What to do!

1.  Preheat your oven to 400 degrees.  Chop your potatoes into bite size chunks and lay them out on a cookie sheet.

2.  Drizzle on some olive oil all over the potatoes.  Sprinkle on the sea salt, pepper and oregano and get messy!  Mix the whole tray with your hands until every potato bite is evenly covered.  Set it in your oven for 30-45 minutes or until golden brown.

3.  While the potatoes are roasting, prepare the sauce.  Add cream to a saucepan on medium-low heat.  Once it starts boiling, add the goat cheese and stir frequently so it doesn’t burn on the bottom.  Let it reduce to half, turn down to the lowest setting to keep warm.

4.  Chop your onion stalks and put in a medium sized bowl.

5.  Add in your potatoes to the bowl and toss with onions and goat cheese sauce!  Voila, a super delicious potato side!

Total: $5.50 for 4 servings or $1.38 per person
