double trouble spicy sweet pototo casserole thingy…

I love multi-coloured veggie dishes and when I saw purple yams at the grocery store, I quickly picked some up knowing I had an orange one in my fridge.  I love the sweetness of yams but sometimes I don’t like it when recipes call for even more sugar!  This recipe I made is slightly salty, slightly spicy and turned out pretty tasty.

What you need!
1 large yellow sweet potato
3 small purple potatos
2 cups of cream
2 tsp of ground chilis in oil
sea salt
olive oil

What to do!

1.  Pre-heat oven to 375 degrees.  Peel and slice your sweet potatoes into 1/4″ slices.

2.  Mix the cream and chilis in oil together.  They obviously won’t mix together properly but the chilis will float around the cream.

3.  Add a single layer of sweet potatos to your dish.  Sprinkle some sea salt on each round.

4.  Spoon some of the cream/chili liquid all over the layer to coat.  Repeat steps 3 and 4 to the rest of the layers.

5.  On the last layer, drizzle some olive oil all over the rounds.  Bake in the oven for 45 minutes to an hour or until all liquid is absorbed..  The top layer will end up being a little crispy and the bottom layers will be soft and yummy.  Enjoy!
