easy asian-y matchstick salad…

Sometimes when you have super fresh ingredients, you don’t need to do much to it to make it taste incredible.  This simple salad uses a light japanese-like dressing with no oil, so the whole thing is super fresh and also really good for you!  I chose to use three kinds of sweet vegetables from my fridge, but you basically can add anything you want that you have on hand!  I LOVE jicama, also known as a mexican turnip, it’s got an apple/pear texture that is crispy and slightly sweet.  Eaten raw, it is super yum as a snack!

Here’s how I made it this salad this time around…

What you need!
1 medium jicama
1/2 large carrot
1 red pepper
2 tbsp rice wine vinegar
1 tbsp sugar
2 tsp soy sauce
1 tsp dashi

What to do!

1.  Prepare your veggies!  Peel the outer brown skin of the jicama, cut it into 1/4 inch slices.  Cut those slices into thin strips.  Do the same for the rest of the veggies.

2.  Mix the dressing ingredients in a separate bowl.  Drizzling a little at a time, toss the salad with the dressing and taste periodically.  Add as little or as much dressing as you like.  Enjoy!
