layered zucchini parmesan madness!

Sometimes I’m lazy and don’t want to stand over the stove tending dinner so baking or roasting dishes are awesome so I can go do something else while the food is cooking.  Zucchini cooks surprisingly fast in the oven so I made a layered casserole dish one night to accompany some chicken.  Nothing in this recipe was really measured and the seasoning is just sprinkled on to your own preference.

What you need!
3 zucchinis (green or yellow)
parmesan cheese
1/2 large red onion
2 garlic cloves minced
olive oil

What to do!

1.  Cut your zucchini into 1/4 inch rounds.

2.  In a medium frying pan on medium-high heat, drizzle some olive oil and sautee the red onions and minced garlic.  Cook until the onions are nice and brown.  Set aside.

3.  In a large casserole dish, lay one layer of zucchini at the bottom.  Drizzle with a bit of olive oil, sprinkle salt, pepper, oregano and parmesan cheese to your liking!  Lay the next layer on top and repeat the process until you are out of zucchini rounds.

4.  On the last layer add the onion mix and top with a more generous layer of parmesan cheese.

5.  Bake your dish at 375 degrees for 25-30 minutes.  Enjoy!

Approx Costs:

zucchini – $2.75
red onion – $0.50
seasoning – $1.25

Total – $4.50 for 3 servings, or $1.50 per person

Try it with saffron infused chicken legs!
