leek and potato soup – the special edition (red snapper and shitake mushrooms)….

On a rainy day, nothing beats a piping hot bowl of soup with some crusty bread.  I like blended cream soups, they’re rich…stay super hot and are pretty filling.  I started out making a regular leek and potato soup and decided to add in some extras to make it even more taste-tacular.

What you need!
3 medium leeks
3 large yukon gold potatos
5 stalks of celery
1 carton of chicken stock
1 litre of milk
1 lb red snapper
1/2 package bacon
7-8 fresh shitake mushrooms
salt
pepper
olive oil
hand blender

What to do!
1.  Start off by cutting your leeks in half lengthwise and rinsing out the dirt in between the leaves.  Cut most of the tough green tips off and dice the rest of the leeks and discard the end bit.  In a large stock pot on medium, drizzle some olive oil and sautée the leeks until soft and slightly browned 8 minutes.

2.  Cut your potatoes into cubes leaving the skin on (more nutrients!).  Chop the celery and the mushrooms into small pieces and set aside.

3.  Once the leeks are soft, add the potatoes in the pot and give it a few stirs.  Turn the heat up to high.

4.  Add the chicken stock and let it come to a boil.  Once it’s boiled, turn down to a simmer for around 8 minutes or until the potatoes are soft.

5.  Remove the stock pot from heat and blend the until smooth.  Be careful it’s hot!  Make sure you only pulse the blender when it’s fully submersed to avoid scalding consequences.  Once blended, add the milk in and put back on medium heat, stirring occasionally.  Season the\soup now with salt and pepper to your liking.  You can be done now!  Or for something extra…follow the next few steps.

6.  Fry the chopped bacon on medium heat in a frying pan until crisp.  Add to the soup.

7.  Add in celery and mushrooms for 3 minutes while stirring, than the red snapper.  The last few ingredients should only take around 6-7 minutes to be fully cooked.  Et voila!  A giant bowl of soup for lunch or dinner!

red snapper – $10.00
mushrooms – $1.00
celery – $1.00
chicken stock – $2.50
milk – $1.00
leeks – $4.00
potatos – $2.00

Total: $21.50 for 8 servings or $2.69 per person
