feed the masses with black bean noodles…

Our house for the next two months has everyone working very different schedules so I’ve been cooking a lot of re-heatable foods that can be nuked in a jiffy.  This recipe is fast, makes a load at a time, and tastes as good freshly cooked as heated up.

What you need!
3 chicken breasts
1 bundle of asparagus
1 package of rice noodles
5 tbsp of black bean sauce
3 cups of water
salt
pepper
olive oil

What you do!

1.  Fill a large bowl or pot of hot tap water and soak the noodles.  This softens them and it will cook all the way when you add it to your sauce.

2.  Snap off the asparagus at the ends to get rid of the tough bits.  Wash and cut into bite size pieces (about 3 per stalk).

3.  Cut chicken breast into bite size pieces.  In a large wok, drizzle with olive oil and sautee the chicken breast on medium-high heat.  Add 3 tbsp of black bean sauce and stir.  Add the asparagus and cook until they turn bright green.

4.  Add your noodles and the water.  Let the wok come to a bubble and keep tossing the noodles.  Add the remaining 2 tbsp of black bean sauce and salt and pepper to taste.   Have a taste of one noodle strain for doneness, if it is still a little firm, cook for another 2-3 minutes..  This is a pretty mild black bean sauce so feel free to add some more if you like it stronger.  If you want it to be saucier, add some more water.

Enjoy!  As a side note, when it is freshly made, it will be very saucy but if you keep it in the fridge the noodles will absorb most of the liquid, it will still be tasty but just less saucy!

$2.50 – rice noodles
$7.00 – chicken breasts
$2.00 – asparagus
$2.00 – seasonings

Total: $13.50 for 6 big servings, $2.25/person
